Easy Bircher Muesli or Overnight Oats

Having Bircher muesli or overnight oats for breakfast seems to be the latest craze! Personally, I’m not a huge fan of ingredient heavy recipes such as spicy carrot cake, pumpkin pie or chocolate peanut butter oats etc etc. I find that a few simple yet delicious ingredients not only taste better but are also easily digested. So a while back, I saw a funny post on instagram which read “I love sleep because it’s like a time machine to breakfast”. That is exactly how I feel about this recipe (even more so as I usually place the oats in the fridge just before I go to bed).

3/4 cup rolled oats
1 cup milk of your choice (i used almond milk)*
pinch of cinnamon

1 small grated apple
1/4 cup yoghurt (i used coconut yoghurt)*
1 tsp honey

Place the oats, milk and cinnamon in a medium sized jar (that’s the fad you see) and refrigerate overnight.

In the morning, mix through the apple, yoghurt and honey.

Serve with fresh fruit and/or crushed raw nuts of your choice (I used homegrown strawberries and crushed pistachios).
