You have got to experience the incredible taste explosions of my two favourite summer salads. I absolutely adore fruit in salad but what I love even more, are fruit-based salads. Mouthwateringly flavourful and rich in colour, these two babies are sure to impress your guests/date/significant other/mother.
1/2 ripe pineapple, cut into bite-sized pieces
1/2 cup crumbled goat’s cheese
small handful of fresh basil (mint and thyme leaves also work well)
1/4 cup pomegranate seeds
juice of half a lemon
1/2 medium watermelon, cut into bite-sized pieces
1/2 cup crumbled feta cheese
1/4 chopped raw walnuts
small handful of fresh basil
Arrange the base fruit in a shallow bowl, then scatter the remaining ingredients on top.
Finish the pineapple salad with a squeeze of lemon and the watermelon salad, with a drizzle of balsamic vinegar.
