Power Slaw

If anything’s going to get you through that upcoming hectic day of work deadlines/university exams/Boxing Day sales (it’s sooner than you think – get ready!) it’s this nutritionally substantial power slaw. A cross between a slaw and a waldorf, not only is this salad absolutely scrumptious, it is also packed with endless nutrients; no doubt your body will love you for it! The best part is, it takes less than 5 minutes to prepare! Incredible on its own, or great as a side dish. Nom nom nom enjoy!

1 packet of herb slaw (cos who can be bothered chopping these days?!)
1/2 cup raw walnut pieces
1/4 cup sunflower seeds
1 apple (diced medium)

juice of one lemon
zest of one lemon
1 tsp seeded mustard
1 tbsp olive oil

Mix both the salad and dressing ingredients together, separately, then combine the two and power on!
