greek salad on a stick

Tonight, for my gorgeous friend Kate’s potluck BBQ, I took ‘greek salad on a plate’. I saw this idea on Instagram a couple of weeks ago and was seriously itching for an occasion to try it out for myself. The end result was fantastic (if I say so myself). Easy, delicious and pretty damn instagrammable too. In other words, not only did it taste good, it looked great too!

1 large cucumber or a few small ones
1 packet of reduced salt cow’s feta
1/2 tsp cumin
1 punnet of cherry tomatoes
some kalamata olives
bamboo or wood skewers

Cut the cucumber and feta into small cubes.

Sprinkle feta with cumin then thread skewers starting with a tomato, then a piece of feta cheese, cucumber and finish with an olive or two (depending on how long your skewers are).

I don’t tend to season Greek salad as the feta and olives are already quite salty so I find extra seasoning to be unnecessary but perhaps you could sprinkle some black pepper or dried oregano leaves on the skewers if you wish.
